Sushi shop planned for Capitol Market

This fall, Capitol Market will be home to a new type of fare.

Mike Oo, who operates the sushi station in Teays Valley's Kroger, is set to open a sushi shop called Fuji Garden, which will be located between the Purple Onion and the Wine Shop.

The shop is expected to open Nov. 1.

Oo said he loves Charleston's downtown and is "really happy" about the opportunity to open a business here.

Tammy Borstnar, executive director of Capitol Market, said Oo has been aggressive in getting everything in order for the opening of his proposed sushi shop at the market.

"He came to visit me about five weeks ago. We sat down and gave him all the information we have about the place," Borstnar said. "We are tight on space as it is, but he turned everything around quite quickly.

"We have never had a sushi bar inside the market, but it has been on our wish list for many years. It is going to provide more opportunity for our customers."

She said the shop will have made-to-order sushi and freshly-made orders.

"You are going to be able to go in and choose what you like or you are going to be able to have it custom made," she said. "This is all simple, but true, sushi."

Borstnar said the proposed menu for sushi connoisseurs will consists of rolls, wraps and platters.

Oo said he and his family will staff the restaurant.
